Ingredients
2 cups all-purpose flour
2 cups sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon coffee powder (espresso powder works great!)
1 cup buttermilk, milk, or yogurt
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup boiling water
Instructions
Preheat the Oven: Set your oven to 160°C (320°F). Prepare two 9-inch cake pans by spraying them with baking spray or greasing them with butter and lightly flouring them.
Mix the Dry Ingredients: In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, salt, and coffee powder. Whisk thoroughly to ensure all the dry ingredients are evenly mixed.
Combine Wet Ingredients: Add the buttermilk (or milk/yogurt), vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix on medium speed until well combined and smooth.
Add Boiling Water: Reduce the mixing speed and carefully add the boiling water to the cake batter. Mix until well combined. The batter will be thin, but that’s okay—this helps the cake stay moist.
Divide and Bake: Pour the cake batter evenly into the two prepared cake pans. Bake for 30-35 minutes, or until a toothpick or cake tester inserted into the center of the cakes comes out clean.
Cool the Cakes: Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, carefully remove them from the pans and allow them to cool completely on a wire rack.
Frost and Decorate: Once the cakes are completely cool, frost and decorate them as desired. You can use a classic buttercream frosting, chocolate ganache, or any of your favorite toppings!
