Œufs au Lait : Une Bonne Vieille Recette de Grand-Mère
INGRÉDIENTS :
1 litre de lait
6 cuillères à soupe de sucre
6 gros œufs
Extrait de vanille ou une gousse de vanille
PRÉPARATION :
Préchauffage du four :
Préchauffez votre four à 180°C (350°F).
Préparation du lait :
Dans une casserole, versez le litre de lait et faites-le bouillir à feu doux pendant 5 minutes. Il est important que le lait boue longtemps pour que l’eau s’évapore au maximum.
Préparation des œufs :
Dans un saladier, battez les œufs avec le sucre à la fourchette pendant 5 à 10 minutes. Ajoutez ensuite l’extrait de vanille ou les grains de la gousse de vanille pour parfumer.
Mélange du lait et des œufs :
Versez le lait chaud petit à petit sur les œufs battus tout en mélangeant constamment pour éviter de cuire les œufs. Mélangez jusqu’à obtenir une préparation homogène.
Filtrage et cuisson :
Transvasez la préparation à l’aide d’une passoire dans un plat rectangulaire, de préférence en pyrex. Placez le plat dans un bain-marie et faites cuire au four pendant environ 30 minutes à 180°C.
Vérification de la cuisson :
Les œufs au lait sont prêts lorsqu’une couche bien dorée s’est formée sur le dessus.
Refroidissement :
Laissez refroidir à température ambiante, puis placez au réfrigérateur avant de déguster.
